With 3 years of aging in nearly freezing temperatures (3 degrees Celsius), the sake takes on a roundness and a very smooth texture. The Yamadanishiki rice is polished to 50% and the area enjoys very soft water, lending an opulence on the palate and a chorus of savory and floral flavors.
