A bone-dry, pastel-pink rice wine — the color comes from omija berries and hibiscus flowers stirred straight into the mash for the last seven days of fermentation, which makes it the outlier among Hana's otherwise cream-colored brews. Omija translates as "five-flavor fruit," a maroon berry no bigger than a quarter-inch that grows on mountain vines in Korea and delivers sweet, salty, sour, bitter and pungent all at once; it's a traditional botanical in jeontongju, and here it does real work, pulling the brew tangy and faintly salty rather than sweet. This was Hana's first botanical makgeolli, born in late 2020 out of thrift — a way to use up the dry, tart sediment left from their first batch of Yakju 14 at the new Greenpoint brewery. Alice Jun founded Brooklyn's first craft brewery devoted to jeongtongju in 2017, working only with organic rice, nuruk and water, fermenting in multiple stages, and adding no sweeteners or stabilizers of any kind. This one is a samyangju, a three-stage brew fermented over four weeks, and at 10% ABV it stays light on its feet. Hana calls it their favorite summer and breakfast wine, which tells you everything about how seriously to take it and how easily it drinks. Serve it cold, and give the bottle a gentle shake to fold the sediment back in.
