Jean-François Germain runs seven hectares of Meursault, Chassagne-Montrachet, and Beaune from a cellar so cold it's legendary. His daughter Lucie joined in 2018, and together they're making whites (three-quarters of production) with the kind of tautness and concentration that gets allocations and whispered about in restaurants. Lutte raisonnée, hand-harvested, traditionally vinified—the Burgundy way that actually works.
