Charmes is one of Meursault's great premier crus, and 2021 made almost none of it — April frosts that dropped to -8C cut white yields to a fraction of a normal crop, with Meursault among the hardest hit. In a cellar like this one, a tiny crop translates into concentration rather than compromise. Jean-Francois Germain farms seven hectares across Meursault, Chassagne-Montrachet and Beaune under lutte raisonnee, hand-harvests everything, and vinifies traditionally in a famously cold cellar — the slow, cool fermentations that follow are the open secret behind the texture and finesse these wines are known for. His daughter Lucie joined him in 2018, and whites account for three-quarters of what they make, which tells you where the domaine's heart is. This is one of the addresses white Burgundy drinkers chase, and a scarce year from it is worth taking seriously.

Jean-François Germain runs seven hectares of Meursault, Chassagne-Montrachet, and Beaune from a cellar so cold it's legendary. His daughter Lucie joined in 2018, and together they're making whites (three-quarters of production) with the kind of tautness and concentration that gets allocations and whispered about in restaurants. Perfect Pairings

Roast chicken with butter and tarragon, sole meuniere, lobster or crab with drawn butter, veal blanquette, gougeres, or a mushroom and Comte tart.

Tasting Profile

Dry white with aromas of orchard fruit, hazelnut and a touch of citrus zest. Medium to full bodied, with a rounded, slightly creamy texture cut by firm, fresh acidity. Oak is in the background rather than out front. Finishes long and faintly saline. Serve chilled, not ice cold.
