Romorantin grows in essentially one place on earth: Cour-Cheverny, a sliver of an appellation of roughly seventy hectares in the woods of the Loire where it is the only permitted grape. It came originally from Burgundy, and legend has Francois I importing 80,000 cuttings to the Touraine in the 1500s. Herve Villemade took over his family's vines in Cellettes in 1995, converted to organic farming in 2000 after tasting the wines of Marcel Lapierre and Clos du Tue-Boeuf, and a sulfur allergy of his own made low-sulfur winemaking a personal necessity rather than a fashion. The vines sit on sand and clay studded with silex flint over limestone; the fruit is direct-pressed, fermented with native yeasts and raised slowly in neutral vessels, then bottled unfined and unfiltered with barely any sulfur. 2024 was a hard, wet year in the Loire with heavy mildew pressure and small crops, which has left the whites fresh and taut rather than rich. Romorantin ages almost absurdly well, so this will drink beautifully now and hold for a decade or more.

More about Herve Villemade

Hervé went conventional, then developed a severe sulfur allergy around 1997. Instead of quitting, he pivoted to zero-SO₂ winemaking and organic farming, which meant he needed the best fruit possible. Now his Cheverny and Cour-Cheverny wines ferment wild, age in everything from concrete to amphora, and taste like somebody actually thinks about what they're making. Still allergic, still uncompromising.

Tasting Profile

Quince, ripe pear and lemon with beeswax, chamomile and a chalky mineral streak. Light to medium-bodied with a waxy texture and very high acidity, finishing dry, saline and long.
