If the Gaisberg is about cut, the Lamm is about power. This south-facing site on the flank of the Heiligenstein is named for its deep loam ("Lamm" is dialect for loam), and paired with loess it makes some of Austria's most concentrated, structured Grüner Veltliner. Hirsch farms it biodynamically, and the result is a big, layered wine that trades the grape's usual lightness for real density and grip. This is grand-cru-caliber Grüner, and it rewards patience as much as it does a serious dinner.

"The 2023 Grüner Veltliner Lamm, grown on loess on top of sandstone, was fermented in stainless steel and matured in half stainless steel, half in an acacia barrel, and then finished in stainless steel. The nose has a touch of chamomile leaf on sun-warmed stone and crushed yarrow, all very subtle. The palate has a tautness that is unusual for Grüner. This comes in with tension, while fine yellow fruit ripeness is tempered by ripe citrus. The palate tingles with that same citrus peel, but all is wrapped in a gentler, yeastier vibe without loosening this delicious tension in the slightest." —Anne Krebiehl MW
