En Remilly is the Saint-Aubin vineyard that sits right up against Chevalier-Montrachet — Fornerot's parcel is at the southern end of the appellation, on the grand cru border, and you can taste the neighborhood. The vines were planted in 1988 on a south-facing slope at around 300 meters, high enough to keep the acidity taut while the exposure ripens the fruit properly. Hand-harvested and gently pressed, the juice ferments with indigenous yeasts in French oak and ages 15 months with just 15% new barrels, then rests three months in vat before bottling — restrained handling that lets the site do the talking. Jérôme founded his own estate in 2004 with 4.5 hectares in Maranges and Santenay, and sold most of his fruit to négociants for years; inheriting nine hectares of family plots in 2018 pushed his focus to Saint-Aubin, where the Fornerots have been established since 1618. He now farms 16.5 hectares and bottles more of it himself every year, which is the best news white Burgundy drinkers have had in a while. Premier Cru fruit from a grand cru doorstep, from a name most people haven't caught up to yet.
