Twenty to sixty meters directly above Chevalier-Montrachet — that's where this parcel sits, at the very top of Saint-Aubin on a solid limestone plateau at the appellation's outer limit. The name comes from the rock itself: distorted, deformed stones outcrop through the vineyard in the shape of dog's teeth, and Jérôme Fornerot's line about the site says it all — "Here, we're never far from the rock." His 0.75-hectare block was planted in 1988 with south to southeast exposure, hand-picked, lightly crushed, pressed and fermented on indigenous yeasts in French oak, then raised 12 months in barrel with just 20% new oak and three months in vat before bottling at the estate. Gentle bâtonnage before malolactic gives his whites their textural lift without ever burying the site. The Fornerots have been in Saint-Aubin since 1618, but Jérôme only built his own domaine from 2004 — 4.5 hectares then, 16.5 now — and Saint-Aubin became his center of gravity in 2018. Saint-Aubin has more Premier Cru land than village land and has spent its life in the shadow of Puligny, Chassagne and Meursault; a Premier Cru this close to Grand Cru soil is one of the last genuinely sane propositions on this stretch of the Côte.
