Joan Rubió, formerly of Recaredo, is a master of biodynamic farming and pure, expressive Catalan whites. Deix is made from 100% Xarel·lo, a grape known for its structure and salty, Mediterranean character. Fermented with skin contact and minimal intervention, this is a wine that’s more about texture and energy than simple fruit. The 2021 vintage is taut, layered, and packed with tension.

Expect citrus peel, green almond, and dried chamomile, with hints of fennel, crushed stone, and a touch of briny sea spray. The palate is structured yet fresh, with gripping acidity and a long, mineral-driven finish. A perfect match for grilled seafood, aged cheeses, or anything that calls for a white wine with some edge.
