An amber wine made the way Georgians have made wine for 8,000 years: buried in clay. Kapistoni is a seventh-generation family winery in the Kartli region, where Niko Chochishvili ferments and ages everything in qvevri, the egg-shaped clay vessels sunk into the floor, with no steel or oak in sight. Here the white Goruli Mtsvane grape is fermented on its skins, which is what turns a white grape amber and gives it grippy tannin and savory depth you'd normally expect from a red. If you've never had a skin-contact qvevri wine, this is a beautifully authentic place to start.
