Les Faverelles is a small organic estate in Vezelay, the far-northern outpost of Burgundy run by Patrick and Isabelle, who traded a Paris bookshop for the vines. Le Nez de Muse is their fresh, unoaked Chardonnay, fermented and aged in steel to keep all the cool-climate cut and clarity intact. Patrick refuses to chaptalize, so these wines come in light, bright and brisk, true to Vezelay's slow-ripening terroir. This is white Burgundy that prizes energy over richness. Drink it young and cold.
