Les Horees is the tiny Beaune project of Catharina Sadde, a Dresden chef turned winemaker who apprenticed at some of Burgundy's most exacting addresses before starting her own domaine with husband Guilhem. Les Prevolles sits on the southern edge of the Beaune appellation, right below the premier crus, off vines planted in the 1970s, farmed organically and biodynamically. She works with a good chunk of whole clusters, wild yeast and used barrels, keeping sulfur to a minimum so the site speaks for itself. The 2024 is the cooler, fresher of the two vintages we have, tighter and more classically Burgundian, with crunchy red fruit and bright acidity that rewards a little patience. A honest, village-level Burgundy that punches well above its address.
