Bathonian limestone and chalk-clay marl rest above hard stone—a profile that forces vines to work deep for sustenance. The result: refined, structured whites with exceptional tension and breed. "A marvellous wine with a thrilling, lemony tension on the initial attack, but a bit more breadth and depth in time as it opens up. The grapes are purchased from a 0.3ha parcel, but the PYCM team has full control over the grape-growing and picking, so this is crafted in the domaine's racy and elegant style. Cellar this for three to five years at least before opening, and then enjoy over the next 20."

Since establishing his 13-hectare domaine in 2001, PYCM has become a reference point for white Burgundy: less oak (bigger barrels), no lees-stirring, earlier picking, aiming for chiseled precision rather than fat richness. Ranked with Coche, Lafon, and Leflaive at the pinnacle, his Chassagne-Montrachets and Meursaults taste crystalline and pure.
