If Les Valnons is Pouillon’s broad-shouldered Blanc de Blancs, Les Terres Froides is its taut, chiselled sibling. Sourced from one of the estate’s coolest, east-facing parcels in Tauxières-Mutry, this single-vineyard Champagne leans hard into purity. Fermented and aged in barrel, then bottled Extra-Brut, it’s a wine that strips away excess and focuses the lens squarely on terroir.

The 2020 vintage is all about focus—lean citrus, wet chalk, crushed herbs, maybe a whisper of green apple skin. There’s nothing ornamental here. It’s sharp, saline, and bracingly clean, but not austere. The texture adds quiet dimension, and the finish hums with mineral persistence.
