Les Saint-Georges gives Nuits-Saint-Georges its name and is currently in formal application for promotion to Grand Cru. It is the most coveted 1er Cru in the village, and Robert Chevillon's bottling is the benchmark. Chevillon, run today by Robert's sons Bertrand and Denis, is THE traditional house of Nuits: 15-to-20-day macerations of fully destemmed fruit, native yeast, around 30% new French oak (mostly Sirugue), and 18-20 months of patient barrel aging. The 2008 was a classical, structured year, and at 17 years on the wine is just opening its window. From the south-facing marl and limestone bench at the southern end of the appellation, this is dense, savory, gravelly Pinot Noir built to repay another decade or more of cellar time.

"Medium red. Very ripe aromas of red cherry and minerals, plus a faint lactic note. Firm acidity is juicy but not green, giving good shape to the flavors of redcurrant and raspberry. Nicely broad wine with good stuffing but I expected a bit more definition. I'd wait two or three years. Incidentally, Betrand Chevillon considers 2008 to be a millesime de garde, comparing these wines to the family's 2001s." —Stephen Tanzer

"More sedate and sweetly-fruited than the other wines in its immediate family, the Chevillon 2008 Nuits-St.-Georges Les St.-Georges displays ripe purple plum and dark cherry; peat and crushed stone; and concentrated red meat juices on an almost plush palate, though one underlain with abundant, fine tannin and laced with enlivening fresh fruit. There is a seamless sense of density and authoritative length here, and while the sheer exuberance and lip-smacking savor found in a couple of the most impressive Chevillon 2008s is missing, I imagine this St.-Georges saying “I’ve got time … see you in 15 or 20 years, if you can keep up!”" —David Schildknecht

Domaine Robert Chevillon is basically the gold standard for Nuits-Saint-Georges. The estate has belonged to the Chevillon family for generations, and today brothers Denis and Bertrand (fifth generation) make wines from eight Premier Cru terroirs plus meticulous village cuvées. Robert Parker's critic William Kelley called them 'one of my favorite addresses in all of Burgundy.' These are characterful, age-worthy, utterly Burgundian. No compromise.

Roast leg of lamb, braised short ribs, mushroom-and-beef Wellington, or a generous wedge of aged Comté. The wine's structure and gravelly depth call for serious red-meat cookery.

Tasting Profile

Dark cherry, dried rose, iron, gravel, sous-bois, and a savory smoke. The palate is dense and chiseled, with firm but resolving tannins, deep mineral pull, and a long, structured finish. Drinking beautifully now; will hold and improve another decade-plus.
