The name has been on maps here since 1537 and most likely means furnaces - either for lime kilns that once stood on the slope or simply for how much heat it collects. Les Fourneaux lies out at Fleys on the right bank, tucked into a side valley off the Serein, facing south and east with the north wind blocked; poor stony clay over Kimmeridgian marl and a great deal of collected sun give it generosity rather than austerity. Billaud works two parcels on the steep part of the slope, farmed organically under contract with the grower, and raises the wine in tank so the ripeness comes through unpadded. He has been on his own since 2009, when he left the family's Domaine Billaud-Simon, and works from a gravity-fed cellar in the middle of Chablis. In a cold, tiny 2024 that built-in warmth is a real asset - it keeps the vintage's considerable acidity in balance, and the wine drinks well young.

"From Côte de Près Girots and Morein, neither of which were hit by hail. A cool, pure and very Chablis-like nose also displays the classic markers of lemon rind, sea breeze and oyster shell. There is even better size, weight and power to the broad-shouldered flavors that exhibit excellent length on the mineral-driven, detailed, robust and compact finale. "The 2024 Chablis Les Fourneaux 1er Cru was cropped at a decent 30 hl/ha and matured entirely in tank. This has a well-defined nose with hints of lemon curd and melted candle wax infusing the citrus fruit. The palate is fresh and vibrant. It's quite crisp and delineated with a mineral-rich finish, though I feel that the Butteaux offers a little more sustain at the moment. The 2024 is one to watch." —Neal Martin

Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
