Vaillons is the big left-bank premier cru south of Chablis - 129 hectares taking in eight lieux-dits - and Billaud's holding is a single plot in the heart of it, on old vines facing southeast into the morning sun. Shallow soil over hard Kimmeridgian limestone gives Vaillons its signature pairing of intense aroma and mineral tension, and this cuvee never meets a barrel: fermented and aged entirely in stainless steel, at least ten months on fine lees, so nothing sits between you and the acidity. Samuel Billaud has been working for himself since 2009, when he left the family's Domaine Billaud-Simon; he kept about four hectares of the old estate's vines when it was sold in 2014. 2024 in Chablis meant April flood and frost, May hail, summer mildew and yields down to a fraction of normal - miserable to farm, and the source of the most classical Chablis in a decade. This one has the density to reward five years in the cellar.

"The 2024 Chablis Vaillons Vieilles Vignes 1er Cru comes from 60-year-old vines that suffered hail damage. It has a complex, focused bouquet that's quite intense due to the low yield (20 hl/ha). "The 2024 Chablis 1er Cru Les Vaillons Vieilles Vignes, sourced from 60-year-old vines in the Vaillons lieu-dit and vinified entirely in stainless steel, was severely affected by hail, yielding just 20 hectoliters per hectare. It wafts from the glass with aromas of pear, orange peel and beeswax, mingling with marine inflections that were less overt in 2023. On the palate, it is medium- to full-bodied and demonstrative yet incisive, laden with tangy acidity and concluding with a long, chalky finish. More about Samuel Billaud

Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
