Bougros is the western end of the Grand Cru hill, the corner that runs down to where the Serein narrows below - a flatter southwest-facing terrace on top where the clay and marl deepen, and a steeper south-facing pitch beneath it where the soil turns poor. Fifteen hectares in all, and the sun-drenched corner of Chablis' seven grands crus: long in the mouth, elegant, intensely mineral, with a refined power that takes roughly a decade to unfold. Billaud ferments about half of it in three-year-old barrels and raises that portion in old wood, then marries it back with the stainless-steel half and leaves the assembled wine on fine lees before bottling; across his range the barrels are all large format, 450 to 600 litres, with only a small share of new wood. 2023 was warm and sunny with a generous crop, which suits Bougros' naturally sunny frame - the fruit is ripe and the salinity keeps it honest. Open it now with something rich, or leave it five to ten years.

"The 2023 Chablis Bougros Grand Cru, which comes from a mid-slope parcel, matured in barrel for 12 months plus 6 months in tank. It has a complex nose that blossoms in the glass, with crushed limestone infusing the yellow plum and subtle orange pith scents. This is razor-sharp in terms of definition. The palate is very well balanced, harmonious and poised, with a fine bead of acidity, gentle grip and a touch of stem ginger on the finish. Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
