Vaudesir is a natural amphitheatre folded into the middle of the Grand Cru hill, and that fold is what makes the wine: two slopes face each other across it, one warm and early-ripening, the other cool and late. Billaud owns plots on both sides and picks them a day or two apart before blending - the warm side brings perfume and flesh, the cool side brings tension, and in a sunny vintage like 2023 that cool side is the insurance policy. Fifteen-odd hectares of clay-heavy topsoil sitting on the same Kimmeridgian marly limestone as the rest of the hill; the wine ferments partly in stainless steel and partly in 400-litre barrels, then spends a year on fine lees in tank. Samuel Billaud struck out on his own in 2009 after leaving the family's Domaine Billaud-Simon, and he keeps his barrels large - 450 to 600 litres - with only a small proportion of new wood, so the site rather than the cellar does the talking. Give it several years; elegance and power arrive in the same glass once it opens out.

It's tensile and bursting with energy. The palate is very well balanced, with a sapid entry. This is a strongly marine-influenced Vaudésir, gently fanning out toward the intense finish. Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
