An Alpine Sauvignon Blanc with no interest in tropical fruit salad or blasts of green pungency — this is the saline, taut version of the grape. Vette means peaks, after the summits that frame the vineyards, and the fruit comes from Trentino's higher, cooler sites: the Cembra Valley and the hills of Pressano, Sorni and Trento, between 200 and 650 meters, on porphyry-volcanic soil, red marl at Pressano and sandy loam in Cembra. The estate behind it is San Leonardo, the Vallagarina property that the Marchese Mario Incisa della Rocchetta — founder of Sassicaia — mentored into making one of Italy's great Bordeaux blends; the same restraint runs through the whites. The winemaking is deliberately transparent: a brief cold soak, a slow fermentation at low temperature in stainless steel, then five months on the lees with regular bâtonnage for texture. Serve it properly cold, around 8–10°C.
