Heirloom wine at an everyday price. Tiberio's Pecorino is an outstanding expression of this indigenous Central Italian variety - rich in character, mineral in disposition, and remarkably consistent year to year. It comes from a single 3.8-hectare hillside parcel about 23 miles inland from Pescara, planted in 2001 at 380 meters on limestone over a marly-gravel subsoil. Pecorino is a small-berried, thick-skinned grape that ripens early and holds its acidity: the fruit is picked in the third week of August, only free-run juice is used, fermentation runs on indigenous yeasts in stainless steel, and the wine is bottled unfined and unfiltered. It lands full-bodied and herb-scented - sage and rosemary are the signature - without ever feeling heavy, which is exactly what makes it such a rewarding food wine.
