Most rosé gets its color from a few hours of skin contact; this one gets it from no contact at all. Tiberio destems the Montepulciano and takes only the juice that runs off under the weight of the fruit - no maceration, no pressing - which is why the Cerasuolo comes out vivid pink and startlingly pure. The grapes are massal-selection Montepulciano grown on limestone at 350 meters in Cugnoli, a hill town about 23 miles inland from Pescara, where sea breezes off the Adriatic meet cold air spilling down from the Maiella massif. Fermentation runs on indigenous yeasts in stainless steel, and the wine goes into bottle unfined and unfiltered. Cerasuolo is Abruzzo's own pink category, with more red-fruit weight than a Provençal rosé, and this is one of its benchmarks. Serve it cool rather than ice cold and treat it like a light red at the table.
