Dolcetto usually gets cast as the cheerful warm-up act, but in Dogliani it has its own DOCG and its own ambitions - and Trediberri farms old vines there, with plantings going back to 1964. The parcels sit at 450 to 520 meters in the communes of Cigliè, Bastia Mondovì and Clavesana, south of the Barolo zone and high enough that acidity stays fresh while the fruit ripens fully. As with everything at the estate, this is a concrete wine: about ten days of fermentation, malolactic in concrete or steel, then a few months' rest before a spring bottling. No oak, nothing between you and the grape. The result has more grip and depth than everyday Dolcetto, with the variety's signature bitter-almond snap on the finish, and it is very good with fifteen minutes in the fridge.
