Moschofilero is a pink-skinned grape that makes a white wine, and up on the Mantinia plateau in Arcadia — where Troupis farms around 640 meters and the summer nights turn genuinely cold — it delivers perfume without any weight to pay for it. Holy Mania is the family's organically farmed, wild-fermented version: no makeup on it, just the grape's own rose-and-citrus aromatics carried on real acidity. Greece has been threatening to become the next big thing for a while now, and small high-altitude domaines like this one are the reason it finally might. Serve it properly cold, around 10-12°C, and treat it as a dinner white rather than an aperitif — there is more grip here than the perfume lets on.
