Around Naples they call Piedirosso "Per' e Palummo" — dove's foot — for the way the red stems fan out at the base of the bunch, and it produces one of southern Italy's lightest and most refreshing reds. Villa Dora bottles it on its own, from ungrafted vines on the lower southern slopes of Vesuvius at Terzigno, where volcanic sand, pumice and lapilli keep phylloxera out and let the vines grow on their own roots. There's no oak involved at any point: fermentation and aging happen in stainless steel, which leaves the grape's smoky, herbal, sour-cherry character completely exposed. The family has farmed organically here since Vincenzo Ambrosio founded the estate in 1997. Twenty minutes in the fridge before you open it.
