Perrières is the site most Burgundy lovers will tell you should have been Meursault's grand cru, and Vincent Dancer owns barely a quarter-hectare of it — 0.29 hectares on the stony limestone of the northern side of Perrières-Dessous, planted mostly in 1963. The estate has been a quiet star of the Côte de Beaune for years: based in Chassagne, certified organic since 2012 (the first in Chassagne-Montrachet to get there), with the 1er cru vineyards worked by horse. Théo Dancer, who returned in 2016 and took over fully in 2021, keeps the cellar deliberately hands-off — native-yeast ferments with nothing added, natural malolactic, no bâtonnage, and a few months settling in stainless steel before an unfined, unfiltered bottling. No new oak has been bought here since 2019, which tells you where the priorities lie: the site, not the barrel. This is the kind of Meursault that gets allocated rather than sold, and it will reward patience in the cellar.
