Kabinett is the wine this estate is known for, and it is made the traditional Mosel way: fermentation stopped with real residual sugar left in the bottle and alcohol kept low, typically around 8.5%. That makes it a fruity-styled, gently sweet wine rather than a dry one. The acidity is so high that it can taste nearly dry, but be clear about what you are buying — if you want Trocken, the Goldgrube parcel bottlings are where to go. The fruit comes from the western, coolest end of the Wolfer Goldgrube, where freshness and precision come naturally and the old vines supply the depth underneath. Moritz Hoffmann and Vinzent Ewest have changed almost nothing about the Prädikat wines since taking over, though the recent ones have gained a sharper, less forgiving edge. 2025 was Germany's smallest crop since 2010, with small thick-skinned berries and firm acidity, and growers up and down the Mosel keep comparing it to 2015; lovely young, and good for decades.

Tasting Profile

Lemon sorbet, white peach, pear and white flowers. Light-bodied and low in alcohol, noticeably sweet on entry but scoured clean by very high acidity into a long, refreshing finish.
