The Burgberg sits in a side valley off the Mosel in the Trarbach district, directly beneath the ruins of an old castle, and cold air pours down into it off the Hunsrück hills at night. Those swings between warm afternoons and cold nights are what make the site: the grapes ripen fully while holding on to a lively, cutting acidity, which makes this west-facing site the estate's most linear and precise source of Kabinett. Be clear about the style — like all of Vollenweider's Prädikat wines this is bottled in the traditional fruity manner, with real residual sugar and low alcohol, typically around 8.5%. It is not a dry wine; if you want Trocken, the Goldgrube parcel bottlings are the ones. 2025 was Germany's smallest crop since 2010, with small thick-skinned berries and unusually firm acidity, which suits a Kabinett like this perfectly. Drink it young for the sheer refreshment, or cellar it.

Fresh-cut grass, minty herbs, lime and green pear. Light-bodied and low in alcohol, sweet on entry but so tightly wound with acidity that the finish reads almost dry.
