Zuccardi’s Fósil Chardonnay comes from San Pablo, one of the highest (and coolest) vineyard sites in the Uco Valley, sitting over 1,400 meters above sea level. Planted on ancient limestone and alluvial soils, the fruit here ripens slowly, developing intense acidity, firm structure, and a distinct mineral profile. The 2022 vintage is racy and focused, built in a style that echoes Chablis more than Napa.

Lemon peel, green apple, and white peach are wrapped around a core of chalk, flint, and subtle spice. There’s no flashy oak—just texture from fermentation and aging in concrete and large neutral foudres, letting the site speak clearly. The finish is long, salty, and mouthwatering. Pair it with oysters, grilled vegetables, or creamy cheeses. This is mountain Chardonnay with poise and precision.

"The 2022 Chardonnay Fosil hails from Zuccardi’s San Pablo Vineyard in the Uco Valley. It was aged in 75% concrete vats, with the remainder going into used French oak barrels. In the glass, it’s yellow with a greenish sheen. The complex aromas range from green apple peel to chamomile, lime, and mountain herbs such as huacatay, with a pastry backdrop adding further depth. On the palate, it’s lean and dry with a chalky texture and refreshingly tart acidity. The vibrant character is a showcase for the terroir with its austere, herbal notes. Better to keep it for another couple of years to let it truly come into its own." —Vinous
