Beat the Heat with Antxiola's Delightful Txakolina Duo

What to do when the heat index has skyrocketed and your heart wants wine, but your face just wants a margarita served in a vessel the size of a kiddie pool? We recommend resolving this dilemma with Txakolina.

This treat from Spain's Basque Country has a margarita's lime zest notes and touch of salt, but with the added complex minerality and long, fresh finish of the world's best peak-of-summer wines.

You could hardly do better than Antxiola, whether it's the blanco or rosado expressions of how addictive Txakolina can be. Its makers, the Errasti family, have been growing grapes and making wine at Bodegas Zudugarai for more than 40 years, well before the DO was officially established in 1989.

Antxiola (pronounced ahn-cho-la, if you'd like to impress the Basque speaker in your life) refers to a famous home in the nearby town of Orio that was originally part of the walls fortifying the town. Written records of the house date back to 1555! You can see an image of it on the wine's label. But by then, you and your companion may be halfway through the bottle––that's how easy these wines are to drink.

The Blanco is slightly spritzy, with lots of maritime salinity and the flavors of fresh lime leaves and zest. Made up of 90% Hondurrabi Zuri and 10% Hondurrabi Beltza planted on the sunny and windy side of the hills just next to the sea, it's a natural seafood pairing.

The rosé, made from 100% Hondurrabi Beltza (a red grape) from the sunnier hillsides, macerates on skins for 24 hours before fermenting in stainless steel. Delicately pale pink with the same bracing acidity and hint of salt, it's irresistible all year long but especially great right now with some snap peas and radishes drizzled with olive oil and salt.
