Don't file this under summer pink: Frank Cornelissen says his Susucaru Rosato works just as well as a light red, the way you'd drink a Jura wine, and it goes with a wide range of food. It's one of his entry-level "estate wines," meant to introduce Etna's northern valley and the way he works, and it's an easy way to try one of the volcano's cult natural producers without paying for his Magma or MunJebel single-vineyard wines. Cornelissen gives the rosato the same treatment as the rest of his range. He makes it from organically farmed, hand-picked fruit grown on volcanic soil. The grapes spend time on their skins for texture and go all the way through malolactic for density and stability. It's a natural wine with real substance, made by someone who doesn't cut corners.

More about Frank Cornelissen

Belgian-born Frank Cornelissen started making wine on Etna's high northern slopes around 2001 and quickly became a lightning rod for his radical non-intervention. He adds nothing to his vineyards, no compost, copper or sulfur, and plants fruit and nut trees, grains and wildflowers among the vines to avoid monoculture. He favors old bush vines, including ungrafted Nerello Mascalese more than a century old, and uses no wood in the cellar. The results are some of the purest, most sought-after snapshots of Etna terroir.

Tasting Notes & Food Pairings

Perfect Pairings

Pasta alla Norma, caponata, grilled swordfish with salmoriglio, arancini, roast chicken with lemon and herbs, a plate of salumi and young pecorino.

Tasting Profile

Expect a deeper, more textured rosé than the pale Provence style: red cherry, wild strawberry and blood orange, with a savoury, volcanic edge and a floral lift. Skin contact typically adds a light grip and full malolactic a rounder, softer feel, balanced by fresh acidity and a dry, mineral finish. Think of it as a chilled light red.
