The benchmark bottle of Basque Country's spritzy seaside white, from a family making txakolina in Getaria for seven generations. Ameztoi's twenty hectares sit on dramatic cliffs facing the Bay of Biscay, just minutes from San Sebastian, and the wine is built from the indigenous Hondarribi Zuri grape, fermented cold in stainless steel and bottled with a touch of its natural fermentation fizz. The 2025 is high-acid, low-alcohol, and barely-there sparkling, exactly what you want pouring from on high into a tumbler with seafood by the water. Drink it ice-cold and young; this is summer in a glass.
