Arianna Occhipinti's Grillo, made with skin contact, from the Contrada Santa Margherita in Vittoria. Arianna founded her estate in 2004 at age 22, niece of Giusto Occhipinti of COS, and is now one of Sicily's most celebrated biodynamic voices. This bottling is 100% Grillo grown on the hillsides of the Iblei Mountains, where cool winds and a tangle of native plantlife keep the fruit fresh. The grapes see a two-day maceration on the skins, spontaneous fermentation in concrete, and a year of aging in Austrian oak. The result is a textured, gently amber-tinged white that drinks more like a structured wine than a casual sipper, full of citrus oils, dried herbs, and that briny Sicilian salinity. Cult biodynamics, unmistakably Vittoria.

Tasting Notes & Food Pairings

Perfect Pairings

Built for the Sicilian table: caponata, sardines in saor, swordfish involtini, or a plate of fritto misto. Also strong with roast chicken, Moroccan tagines, and aged sheep's-milk cheeses thanks to the gentle tannin and skin texture.

Tasting Profile

Lemon peel, dried chamomile, apricot pit, and a hit of sea salt. Skin contact gives a faint tannic grip and amber tint, while concrete and old Austrian oak round the texture. Dry, mineral, and savory on the finish.
