Armand Heitz took over his family estate in Chassagne-Montrachet in 2012 after formal training in viticulture and oenology at Changins. He's working prestigious Côte de Beaune crus—Pommard, Chevalier-Montrachet, Meursault—with agroecological principles and a nearby cattle farm integrated into a polyculture system.
