Sparkling Shiraz is Australia's own contribution to the world of bubbles: a deep-red sparkler that sounds like a novelty until you taste one made properly. This is one made properly. It's 100% Shiraz from Best's Concongella Vineyard in Great Western, a corner of the Grampians in western Victoria that has been making the style for over a century. It's made by the traditional method and rests on its lees in bottle for at least 22 months before disgorgement, which is the kind of patience we usually expect from Champagne. Best's brought its Great Western Sparkling Shiraz back in 2006 after almost 40 years without one. The Concongella vineyard itself dates to 1866 and takes its name from the creek that runs beside the vines. If you've never had a red sparkler, this is a serious place to start, and it's as much fun as it sounds.

Peking duck or roast duck with cherry sauce; glazed ham; smoked beef brisket; pepper-crusted steak; lamb chops off the grill; a board of salami, pâté and aged cheddar.

Tasting Profile

Expect the classic Australian sparkling Shiraz profile: a deep purple-red foam with blackberry, plum and dark cherry, lifted by the peppery spice typical of Grampians Shiraz. Long ageing on the lees in bottle usually adds savoury, brioche-like depth and a finer, creamier mousse, with soft tannins and fresh acidity carrying through to a dry, spicy finish.
