A Harlan-trained winemaker making California Cabernet that rarely goes above 13% alcohol. In a category famous for ripeness and power, that's a real statement. Ketan Mody did his apprenticeship at Harlan Estate, bought sixty acres on Diamond Mountain and launched Beta in 2011 to make wine a lighter, more hands-off way. The house approach is minimal intervention throughout, with wild fermentations in large casks of at least 500 liters. Lupina is one of the label's bottlings, and it comes from the same thinking. Beta's releases usually sell out within 24 hours of going to the mailing list, so finding one on a shop shelf is a small piece of luck. If you love Cabernet's structure but are tired of the bigger-is-better race, start here.

Perfect Pairings

Grilled dry-aged ribeye with herb butter; rosemary-and-garlic roast leg of lamb; wild mushroom and farro risotto; duck breast with cherry jus; aged Gouda or Comté.

Tasting Profile

Expect a leaner, fresher take on California Cabernet: red and black currant, cedar and a savoury, faintly herbal edge rather than jammy ripeness. Typically medium-bodied, with bright acidity and fine, firm tannins framed by fermentation in large casks, finishing dry and savoury. Think closer to a classic Bordeaux than a blockbuster Napa Cabernet.
