The name says it all: "Trinch!" comes from Rabelais's Fifth Book ("Trinch! That is to say, drink, for wine has the power to fill the soul with all truth, all knowledge, and all philosophy"), and the Bretons have never pretended this bottle is for anything else. Catherine and Pierre Breton call it a timeless classic of the domaine, and they picture it at a Parisian bistro counter, poured alongside the dish of the day. It's a Bourgueil Cabernet Franc from the Bretons' gravel parcels on the Bourgueil slope, where the soils are clayey sand, gravel and pebbles on the lower terraces of Restigné, just east of Bourgueil. A bit of trivia: in the Loire, Cabernet Franc is known as "Breton," which makes the family name feel like destiny. The Bretons are icons of natural Loire wine. They've farmed organically since 1985, were certified organic in 1991 and adopted biodynamic practices in 1994. Kermit Lynch imports their wines. Some of the most thoughtful growers in the Loire make this everyday red, and that's exactly why it belongs in regular rotation.

Fifth-generation vignerons in Restigné took a radical leap in 1985: convert to organic, then biodynamic, then natural winemaking. Catherine and Pierre believed the terroir could speak if they got out of its way. By 1995, they were vinifying without sulfur (cuvée 'Nuit d'Ivresse'). Hand-harvested, wild-yeast Cabernet Francs from Bourgueil and Chinon emerge as powerfully structured vins de garde—mineral, floral, hauntingly perfumed, shaped by gravel, clay, or tuffeau soils. Perfect Pairings

Do as the Bretons do and serve it with a casse-croûte: crusty baguette with rillettes de Tours, soft cheeses, or sardines with salted butter. It also suits whatever bistro plat du jour you're having, like steak frites, roast chicken or saucisson.

Tasting Profile

Expect the bright, gravel-grown side of Bourgueil Cabernet Franc: crunchy red cherry and raspberry, a touch of graphite and the grape's signature leafy, green-pepper lift. It's typically light to medium-bodied, with fresh acidity and soft, fine tannins, and finishes dry, juicy and savoury. Like a good Beaujolais, it's a red that takes a slight chill well.
