La Dilettante is Catherine Breton's personal project, the dry Vouvray she has been 'dabbling' with since 2002, and it shows in how precise it is. The fruit comes from roughly 40-year-old Chenin Blanc vines on flinty (silex) soils, gently pressed and given a short vinification in stainless steel, with no malolactic fermentation so the natural acidity stays razor-sharp. Bottled the spring after harvest, it's about purity and tension rather than weight. The Bretons are organic and biodynamic Loire pioneers, and this is imported by Kermit Lynch. A bone-dry Chenin that drinks beautifully young but has the structure to surprise you with a few years on it.

Fifth-generation vignerons in Restigné took a radical leap in 1985: convert to organic, then biodynamic, then natural winemaking. Catherine and Pierre believed the terroir could speak if they got out of its way. By 1995, they were vinifying without sulfur (cuvée 'Nuit d'Ivresse'). Hand-harvested, wild-yeast Cabernet Francs from Bourgueil and Chinon emerge as powerfully structured vins de garde—mineral, floral, hauntingly perfumed, shaped by gravel, clay, or tuffeau soils. Their commitment to indigenous yeast and minimal sulfur has defined natural Loire Cabernet Franc. Loire's natural wine pioneers, no compromise.
