Mont Bernard is a Blanc de Blancs assembled from three Chardonnay parcels in Reuil, a Marne Valley village far better known for Pinot Meunier, and it is the cuvee where Caze-Thibaut's long lees aging shows most clearly. Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. Grapes are picked by hand, pressed slowly, and the juice moves by gravity; fermentation is cold and spontaneous in barrels of 228 to 350 liters, and the wine rests for years on fine lees before disgorgement, bottled unfined, unfiltered, and dosed at roughly 2 g/L after blind tasting. He was invited into Terres et Vins de Champagne, the growers' collective, after only his second release, which tells you how quickly this project got noticed. 2021 brought frost and severe mildew to Champagne and one of the smallest harvests in decades, so a parcel-selected wine from the year is no accident.

What Polaner Selections has to say about this wine:

Viticulture

Parcels are worked without the use of any herbicides or pesticides. Fabien “scratches” or hoes the soils preferring to minimally disrupt the soil structure and plant life. From pruning to harvesting all vineyard work is done by hand and each parcel is harvested separately. Harvesting occurs when the grapes are at optimal ripeness.

Vinification

Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. 100% malolactic fermentation, unfined and unfiltered.

Aging

Time on yeast 66 months. The tirage & disgorgement dates are engraved on the bottle.

Tasting Notes & Food Pairings

Perfect Pairings

Fried chicken, roast pork loin, seared scallops, tempura vegetables, or aged Gruyere.

Tasting Profile

Lime, green apple and white blossom with a nutty, brioche-like depth from extended lees aging. Dry and austere in the best way, with vibrant acidity and a long mineral finish.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
