Moreau-Naudet has quietly become one of the elite addresses in Chablis, and the wines deliver serious quality. Vaillons is a Premier Cru on the left bank of the Serein, known for a slightly softer, more open style than the firmer right-bank crus, while still carrying that classic Chablis cut. The house style here is uncompromising: low yields, native-yeast fermentations, and aging in mostly tank with a small portion of old oak so the Kimmeridgian limestone minerality comes through pure. This is a magnum (1.5L) of the 2023, which means a bottle built to age gracefully and made for a table full of people. Serve well-chilled. A statement white for an oyster feast or a celebration.

"The 2023 Chablis Vaillons 1er Cru has a backward nose that's old school in style with green apple, undergrowth and crushed stone aromas. There's something uncompromising here, which I like. The palate is well balanced with a keen line of acidity, a pleasant edginess and a brisk, citrus peel-tinged finish that gently fans out. It's not bad, though this needs a little more nervosité. "Sourced from 60- to 77-year-old vines in four of this premier cru's climats, including Séchet, Moreau-Naudet’s 2023 Chablis 1er Cru Vaillons is vinified 70% in tank, with the remainder in oak (old 228-liter barrels and a few 600-liter foudres). Opening from the glass with an expressive bouquet of tangerine zest, white flowers, pear and oyster shell, it’s followed by a medium to full-bodied palate with ample chalky extract and a saline finish. More about Domaine Moreau-Naudet

Domaine Moreau-Naudet is a great source for excellent, nonconformist Chablis. Taking cues from legendary producers like Raveneau and Dauvissat, Moreau-Naudet makes ripe, shapely Chablis that define minerality with deeply concentrated substance. The flinty and austere wines that have become the norm for this region are less a reflection of the region’s true terroir and more a side-effect of high yield, early picking and machine harvesting. Moreau-Naudet does the opposite. By picking late and harvesting by hand, as well as tending their vineyards biodynamically, Moreau-Naudet is able to make complex wines that many Chablis producers with wines similarly priced have not.

Winemaker Stephane Moreau suffered an untimely and tragic death in August 2016. When he passed unexpectedly it sent a shock through Burgundy and the wine world beyond. However, his family and assistant winemaker rallied and worked hard to maintain Stephane's racy and detailed style for the 2016 vintage. Since then Stephane’s wife, Virginie Moreau-Naudet, has carried on her late husband’s philosophy and style with resounding success. Tasting these wines today we feel inspired and grateful for her and her family’s perseverance.
