Dry Vouvray from a certified organic and biodynamic family estate, and it shows in how unadorned this Chenin tastes. Ammonite is Château Gaudrelle's straight-ahead sec: no residual sugar to hide behind, just Chenin Blanc grown on about 16 hectares outside Tours and bottled for freshness and precision. The estate makes the full Vouvray spread — sparkling and still, dry through sweet, white and rosé — but this is the one that argues the case for the grape without any help. Gaudrelle has been moving steadily toward gentler, more natural cellar work in recent years, and the wines have gotten more transparent for it. If you've only met Vouvray in its off-dry guise, this is the bottle that reframes it: an aperitif white with real nerve, and a serious food wine besides. Worth noting they still receive visitors in their troglodyte cellars dug into the rock, which is about as Loire as it gets.
