Christophe Mignon’s ADN de Foudre Chardonnay is a rare Blanc de Blancs from his biodynamic plots in Festigny and Le Breuil, Vallée de la Marne. This 2019-based Brut Nature is 100% Chardonnay grown on clay-limestone soils and vinified with Mignon’s lunar-guided, low-intervention methods.

Fermented and aged 12 months in large oak foudres, the wine then spends nearly five years sur lie before disgorgement with zero dosage. This is Mignon’s most precise Chardonnay cuvée—textured, mineral, and sharply expressive of site.

"The 2019 Brut Nature ADN de Foudre Chardonnay is the first Chardonnay I have tasted from Mignon. It is impressive, to say the least. A rush of citrus peel, white flowers, lemon confit and marzipan sprays out of the glass. There's a touch of reduction, but it is complementary and not a distraction. Time in the glass brings out the wine's intense vinosity. This is really a still Chardonnay with a bit of mousse. As the name states, this cuvée is fermented and raised in wood. I absolutely loved it. No dosage." —Antonio Galloni

More about Christophe Mignon

In addition to being a top Champagne vigneron, Christophe Mignon is something of a wizard, a mad scientist.

Mignon is credited — along with a few other notable Champagne vignerons (including Jérôme Prévost) — with elevating the status of Pinot Meunier, once considered a supporting player to Chardonnay or Pinot Noir's leading role. His estate is located in the Vallée de Marne, where Pinot Meunier is grown in clay and chalk soils, ideal for expressing intense fruit and precise minerality.

For the past 20 years, everything at the estate has been done with respect for the lunar calendar, as well as Christophe's unwavering respect for the earth. An inveterate tinkerer, he's designed many of his own vineyard tools, including a homeopathy machine that dispenses minute amounts of copper (as well as tinctures of valerian root and garlic), to curb the need for intrusive chemicals.

He farms over 30 small parcels, and vinifies parcels separately, based on their unique terroir. From a group of vines averaging 45 years of age,
