This is the serious, old-vine end of a young Vouvray domaine worth watching. Les Murs comes from a single tiny parcel of 70- to 100-year-old Chenin Blanc, planted on barely a hand's depth of soil directly over tuffeau limestone and worked by horse. Twin brothers Guillaume and Baptiste Frey founded Clos Thierriere in 2021 (they trained under Vincent Careme) and farm organically; this cuvee is fermented with wild yeast and aged around a year or more in seasoned oak, which gives it texture and depth without ever tasting oaky. It's a dry Vouvray (sec) - no sweetness here, just Chenin's electric line of fruit and stone. The flagship, and built to age.

Twin brothers Guillaume and Baptiste Frey taught themselves winemaking during lockdown under the tutelage of Vincent Carême, then moved to Vouvray and bought 12 hectares around Vernou-sur-Brenne. They're now making some of the most elegant Chenin Blanc you'll find. Eliminated herbicides and pesticides, working instead to restore biodiversity and soil vitality. Certified organic in 2024. These wines have the precision of real farming, not just talking about it.
