His approach is uncompromising: long, slow fermentations of 3-5 weeks, and 100% new French oak—making Guillon one of Burgundy's largest buyers of new barrels after DRC and Hospices de Beaune. This 2008 has developed beautifully over 17 years. HVE Level 3 certified for environmental practices.
