This is 2008 Dom Pérignon the way most of us will never manage to drink it. The house held it back and released it as P2, its second "Plénitude." It's a late-disgorged version of the original 2008 release, left about seven more years on its lees before disgorgement in spring 2024. 2008 was a cool, grey season that brightened only as harvest began in the second half of September, and cellar master Vincent Chaperon calls this P2 a "lighthouse" for its energy. The waiting has been done for you, so you skip the patience and the gamble on your own storage. It's finished Brut, with very low dosage. Yes, it's a famous name, but the real reason to buy this bottle is to taste what time does to a top vintage Champagne. Serve it with dinner rather than saving it for a toast.

Tasting Profile

Expect what long lees ageing typically brings to a top Chardonnay–Pinot Noir prestige Champagne: toasted brioche, roasted nuts and a smoky, struck-flint edge layered over citrus, white peach and honeyed notes. The mousse tends to be very fine and creamy, with a fuller, more vinous body held taut by bright acidity, finishing dry, long and savoury.
