Three zeros: zero chaptalization, zero liqueur de tirage, zero dosage — a pétillant naturel with nothing added at any stage, which means the bubbles and the balance both come from grapes picked at full maturity (12–12.5% potential alcohol) and a single long, slow fermentation with indigenous yeasts. This is the wine that won us over on first sip, and it's still the clearest argument for why Jacky Blot came to define Montlouis-sur-Loire. His method is frankly Burgundian — he ferments even the sparkling base in old barrels (five to ten years old, so no oak flavor, just air and texture), and ages it on the lees for two years in the estate's cold cellars. Certified organic since the late 1980s, from Chenin vines 60 to 80-plus years old, now in the hands of his son Jean-Philippe.

Oysters on the half shell, rillettes and cornichons, fried chicken, goat cheese from the Loire (Sainte-Maure, Selles-sur-Cher), pork terrine, salt-and-vinegar potato chips, or a plate of smoked trout with crème fraîche.

Tasting Profile

Bone-dry and gently sparkling rather than aggressively fizzy — a soft, foamy bead instead of hard Champagne pressure. Aromas of green apple, quince, lemon peel and a little beeswax and bread dough from two years on the lees. Medium-bodied, with bright cutting acidity and no sweetness at all to soften it. Finishes long, dry and mineral.
