Sulauze's Charbonnières channels Syrah through a low-intervention lens: hand-harvested grapes undergo cool maceration for 15 days after a partial carbonic maceration in concrete. Fermentation is wild, aging minimal (Syrah ages in demi-muids), and sulfur is added only at bottling in volcanic form. The result is a wine of purity and restraint, built on the biodynamic farming of the estate's 29 hectares. This is modern Provence done with respect for the fruit and the site.

More about Domaine de Sulauze

Karina and Guillaume Lefèvre bought this 29-hectare Provence estate in 2004 after Coup de Foudre and converted to organic then biodynamic viticulture. Their flagship Pomponette rosé is fermented with indigenous yeast from a blend of Grenache, Cinsault, Syrah, Mourvèdre, and Vermentino. It tastes like a trip to the Côte d'Azur in a glass—crisp, mineral, alive with sea salt.
