Pauline and Geraud Fromont's organically farmed Sud-Revermont estate has become a quiet reference for terroir-driven Jura. 'Au Rettin' is a single parcel in the L'Etoile appellation, planted to Chardonnay on the fossil-rich limestone soils that give L'Etoile its name (literally 'the star,' from the star-shaped pentacrine fossils — calcified crinoids — found throughout the soils). The Fromonts vinify ouille here, keeping the barrels fully topped throughout a long elevage so the wine reflects place rather than winemaking style. The 2022 vintage offers a Chardonnay of crystalline focus and mineral intensity, recognizably Jura in its salinity and orchard-fruit cut, but with the kind of weight and length that puts it in conversation with the best whites of Burgundy.

Perfect Pairings

Roast chicken, sole meuniere, scallops, mushroom risotto, aged Comte, Chaource, or any nutty hard cheese. Excellent with cream sauces and brown-butter preparations, or simply a wedge of mountain cheese.

Tasting Profile

Dry, medium-bodied, and mineral. Yellow apple, lemon zest, pear, white flower, hazelnut, and a deep wash of crushed-shell salinity. Vibrant acidity, fine texture, and a long, stony, focused finish.
