Domaine des Fables is Francois Gilles' tiny Alpine project, four hectares of steep slopes in Savoie's Chautagne, farmed organically and biodynamically with an eye for balance and biodiversity. If Gamabumba is the fun, gulpable Gamay, 'Les Chroniques de Gargantua' is the more serious one: 100% Gamay from 35-year-old vines, given a long whole-bunch maceration and aged ten months in barrel on its lees. The result is a deeper, more structured Alpine red that still keeps that mountain freshness and energy. Expect concentrated dark berry fruit, savory spice, and a fine, structured finish that rewards a little patience. Gamay taken seriously, from one of Savoie's most exciting small growers.

More about Domaine Du Fables

Gamay is better known in Beaujolais, but in Savoie's Chautagne it takes on an Alpine accent, and Domaine des Fables is one of the young natural producers making the case for it.

François Gilles started the domaine in 2019, working slopes in Chautagne, a corner of Savoie between the Rhône and Lac du Bourget, whose waters temper the climate. His plots sit among woods, streams and meadows, on southwest-facing scree of sandstone and limestone. The vineyards have been converted to organic farming, and he follows biodynamic practices.

The cellar is hands-off, with spontaneous fermentations on native yeasts. The range also takes in Jacquère and Mondeuse, and the Gamay comes in two moods. Gamabumba is the juicy, easygoing one, made for a slight chill; Les Chroniques de Gargantua is the serious one, from older vines, macerated as whole clusters for close to a month and aged ten months on its lees in old barrels. Expect fresh, crunchy reds with a mountain edge.
