One of the most sought-after grower Champagnes anyone makes today — and this is the bottling that lets you in, since Emmanuel Brochet's own vineyard is a single 2.5-hectare slope that yields only 7,000 to 8,000 bottles of everything combined. The "Selected" series is his small side project, where he applies the same hands-on approach to organically farmed fruit from beyond his own gate. Brochet is a first-generation grower who started in 1997 and released his first label in 2002, farmed with no chemicals for roughly a decade before earning organic certification in 2011, and still does nearly all the work himself by hand. In the cellar it's a traditional vertical press with only the cuvée fraction kept, natural fermentation in barrique, minimal sulfur, and a second fermentation in bottle started with ambient yeasts he selected himself. Every wine he makes is Extra Brut, this one included, and the quantities are small enough that it's a buy-it-when-you-see-it proposition.

Emmanuel became a first-generation Champagne grower in 1997, releasing his first label in 2002. His 2.5 hectares sit on a slope in Villers-Aux-Nœuds with vines ranging from 1962 to 1984 plantings. Tasting Profile
